the hot pepper of choice in the Caribbean. relative to the habanero and fruit of the quick grown pepper plant (capsicum chinense) with a heat rating of 80,000 to 400,000 on the Scoville scale . they come in range of colors from yellow to green to red. these peppers can be very hot but they have also have a sweet, fruity taste as well. as pepper sauce is used as a condiment, as well as to season meat, fish, and poultry.
scotch bonnet should be stored in an airtight container, preferably in a cool and dark place.
